Directions
  1. In a large bowl, add softened butter, sugar, and brown sugar. Beat using a hand mixer or a stand mixer on medium until completely creamed together.
  2. Add in the egg and vanilla and continue mixing until fully combined.
  3. Mix baking soda, salt, and flour together and add to the mixer ¼ cup at a time.
  4. Once mixture is completely combined, add in the chocolate chips and bacon and mix in for about 30 seconds.
  5. Place dough, covered, in the refrigerator and chill for 2 hours.
  6. Preheat oven to 350 degrees.
  7. Using a medium cookie scoop, scoop balls of dough onto a lined baking sheet.
  8. Bake cookies for 12-16 minutes or until the edges are golden brown.
  9. Serve or store in an airtight container.
