Directions
- In a large bowl, add softened butter, sugar, and brown sugar. Beat using a hand mixer or a stand mixer on medium until completely creamed together.
- Add in the egg and vanilla and continue mixing until fully combined.
- Mix baking soda, salt, and flour together and add to the mixer ¼ cup at a time.
- Once mixture is completely combined, add in the chocolate chips and bacon and mix in for about 30 seconds.
- Place dough, covered, in the refrigerator and chill for 2 hours.
- Preheat oven to 350 degrees.
- Using a medium cookie scoop, scoop balls of dough onto a lined baking sheet.
- Bake cookies for 12-16 minutes or until the edges are golden brown.
- Serve or store in an airtight container.
