Directions
  1. In a Dutch oven or large cast iron, heat oil to 350 degrees.
  2. In a large bowl, whisk the egg, milk, and onion until fully combined. Add in the cornmeal, flour, baking powder, and salt and stir until well combined. Fold in the bacon.
  3. Using a small cookie scoop, drop batter into oil. Fry until golden brown, 2 to 3 minutes, flipping at least once. Fry in batches of 6 to 8 hush puppies at a time. Drain on a paper towel lined plate. Serve warm with butter or honey.
