1. In a medium saucepan, prepare grits according to instructions on the container. Once cooked, stir in butter, cheese, and salt and pepper to taste.
  2. In a large skillet over medium heat, cook chopped bacon. Once cooked, remove bacon form pan using a slotted spoon, and transfer it to a paper towel lined bowl.
  3. Add garlic, shrimp and chipotle chili powder into the same skillet. Stir occasionally until the shrimp are fully cooked, about 3-5 minutes.
  4. Serve shrimp over grits and top with bacon and green onion.
