Directions
- Open the English muffins and cut each side into 6 pieces. Cut the slices of ham into about 1-inch squares.
- Whisk together the eggs, milk, heavy cream, and salt and pepper in a medium bowl until well combined.
- In a greased casserole dish, toss together the English muffin pieces and ham until evenly distributed. Pour the egg mixture on top, cover the baking dish with foil and refrigerate overnight.
- When ready to cook, preheat the oven to 350 degrees.
- Bake 30 minutes with the foil on. Remove the foil and bake for an additional 30 minutes or until the eggs are set.
- To make the hollandaise sauce: Place eggs, lemon juice, and salt into a blender or immersion blender cup. Blend for about 1 minute or until thoroughly combined. Melt the butter and slowly add to the egg mixture while blending.
- Drizzle the sauce over the casserole, garnish with green onions, and serve.
