Directions
  1. Open the English muffins and cut each side into 6 pieces. Cut the slices of ham into about 1-inch squares. 
  2. Whisk together the eggs, milk, heavy cream, and salt and pepper in a medium bowl until well combined.
  3. In a greased casserole dish, toss together the English muffin pieces and ham until evenly distributed. Pour the egg mixture on top, cover the baking dish with foil and refrigerate overnight.
  4. When ready to cook, preheat the oven to 350 degrees. 
  5. Bake 30 minutes with the foil on. Remove the foil and bake for an additional 30 minutes or until the eggs are set. 
  6. To make the hollandaise sauce: Place eggs, lemon juice, and salt into a blender or immersion blender cup. Blend for about 1 minute or until thoroughly combined. Melt the butter and slowly add to the egg mixture while blending.
  7. Drizzle the sauce over the casserole, garnish with green onions, and serve.
