Directions
  1. Preheat oven to 350 degrees.
  2. Slice each croissant in half and spread 1 tablespoon of Dijon inside of each. Assemble sandwiches by topping with ham slices, 2 eggs, and a piece of cheese.
  3. Wrap each sandwich in foil individually and place directly on top rack in oven.
  4. Cook for 20 minutes and serve warm.
