Directions
  1. Preheat oven to 350°F.
  2. Cut mini sweet peppers in half and remove the seeds. Place on a foil lined baking sheet.
  3. Place a small spoonful of sauce onto each pepper and spread gently. Top with 1 tbsp. mozzarella cheese and 1 piece of pepperoni.
  4. Bake until cheese is melted and golden brown about 10-12 minutes.
  5. Allow to cool at least 2 minutes and top with parsley and crushed red pepper flakes. Serve.
