Chicken Cordon Bleu Pasta

Ingredients

  • ½ lb. Sugardale Ham, diced
  • 2 tbsp. butter
  • 1 medium yellow onion, diced
  • 2 tbsp garlic, minced
  • ½ lb. shredded chicken
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 1 cup chicken stock
  • ½ cup heavy cream
  • 1 lb. pasta
  • 1 cup swiss cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • Fresh parsley

Directions

  1. Preheat oven to 350°F and prepare pasta according to packaging instructions.
  2. Heat a large oven safe pot over medium heat and add butter. Add the onion and garlic and cook stirring occasionally until the onion becomes translucent, about 5 minutes.
  3. Add the ham, chicken, Dijon, salt and pepper to the pot and stir to combine. Add the chicken stock and heavy cream, stir and allow the mixture to come to a light simmer.
  4. Remove from heat, add cooked pasta and cheese and stir until evenly distributed.
  5. Sprinkle additional cheese on top and bake for 15-20 minutes or until cheese is melted and the pasta is heated through.
  6. Garnish with fresh parsley and serve.
