Ingredients

  • 1 1/3 cups (11 oz) ricotta cheese
  • ½ cup powdered sugar
  • ¼ tsp vanilla extract
  • ½ tsp lemon juice
  • 12 slices of Sugardale bacon
  • ¼ cup mini chocolate chips

Directions

  2. Place a folded paper towel into a bowl, put ricotta cheese into the bowl and set in the fridge for 30 to 45 minutes.
  3. Preheat oven to 375 degrees.
  4. Rip 6 pieces of foil. Roll foil into a tube like form, then crunch the foil so it is about ¾ of an inch thick.
  5. With an electric mixer or by hand, mix together ricotta, powdered sugar, vanilla, and lemon juice until it has a fluffy consistency. Cover the bowl with plastic wrap and refrigerate.
  6. Take the foil tubes and wrap 1 slice of bacon tightly around each side. Overlap the edges of the bacon. Continue to do this with all remaining slices of bacon.
  7. Bake bacon on a sheet for 20 minutes or until crisp.
  8. When bacon is cool enough to handle, use your fingers to gently push on the foil and slide the bacon off the foil tube. You may need to wiggle the bacon and foil to get them off.
  9. Remove ricotta mixture from the refrigerator and place into a Ziploc bag. Cut off a tiny part of the bags corner. Pipe the filling out of the bag into the hole of the bacon shells.
  10. Place the mini chocolate chips in a bowl. Dip each end of the Baconoli in to the chocolate chips. Serve immediately.
