Ingredients
- ½ lb. Sugardale Bacon, Chopped
- 2 Tbsp. Butter
- 1 ½ Medium Red Onions, Sliced
- 1 ½ Medium Yellow Onions, Sliced
- 2 Tsp. Garlic, minced
- 1 Tbsp. Flour
- ¼ Cup Dry White Wine
- 4 Cups Beef Broth
- 1 Tsp. Dijon Mustard
- 3 Springs Fresh Thyme
- Salt and Pepper to taste
- 2 Cups Mozzarella, shredded
- 1 Baguette, sliced
Directions
- Set the Instant Pot to sauté mode.
- Put the chopped bacon in and cook until crisp, remove from pot and set aside.
- Add the butter to the pan and let melt. Place the garlic and onions in the pot, stirring occasionally and cook until the onions become soft and brown.
- Once the onions are cooked, turn of the sauté function and add the flour until the onions are coated.
- Add in the wine, beef broth, mustard, thyme, and salt and pepper.
- Place the lid on and Pressure cook on high for 12 minutes with a 20-minute natural release.
- Place soup in an oven safe bowl and top with a baguette slice, bacon and cheese.
- Preheat the broiler and add the bowls for 3-5 minutes until cheese is melted and bubbling.
