Bacon Cheddar Zucchini Bread

Ingredients

  • 1 lb. Sugardale Bacon, cooked and chopped
  • 2 cups all-purpose flour
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 cup milk
  • 1 egg
  • ¼ cup butter, melted
  • 1 ½ cheddar cheese, shredded
  • ¼ cup green onions, chopped
  • 1 ½ cups zucchini, shredded and squeezed

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, milk and butter together until fully combined.
  4. Combine the egg mixture with the flour mixture and mix until just combined.
  5. Fold in the bacon, zucchini, cheese, and green onions.
  6. Pour the batter into a greased loaf pan. Bake for 55-60 min.
  7. Allow bread to cool and remove from pan. Slice and serve.
