Ingredients
- 1 lb. Sugardale Bacon, cooked and chopped
- 2 cups all-purpose flour
- 1 ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1 cup milk
- 1 egg
- ¼ cup butter, melted
- 1 ½ cheddar cheese, shredded
- ¼ cup green onions, chopped
- 1 ½ cups zucchini, shredded and squeezed
Directions
- Preheat oven to 350°F.
- In a large bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, milk and butter together until fully combined.
- Combine the egg mixture with the flour mixture and mix until just combined.
- Fold in the bacon, zucchini, cheese, and green onions.
- Pour the batter into a greased loaf pan. Bake for 55-60 min.
- Allow bread to cool and remove from pan. Slice and serve.
