- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoon kosher salt
- 1/2 cup butter, frozen
- 1/4 cup water
- 2 large eggs
- 1 lb. Sugardale Ham, diced
- 2 tsp. olive oil
- 1/2 medium onion, diced
- 1 cup swiss cheese, shredded
- In a large bowl, mix the flour and salt. Grate the butter into the flour mixture and use your hands to combine.
- Add one egg and water into the bowl and mix until just combined. Place the dough onto a floured surface and knead until it comes together. Wrap in plastic wrap and transfer to the refrigerator to chill overnight.
- In a medium pan, over medium heat, cook the oil and onion until softened. Remove the onion from the pan and mix with the ham and cheese.
- Roll out the chilled dough to 1/8in thick and cut out eight six-inch circles.
- Place the circles on a baking sheet and brush each circle with egg wash. Add a spoonful of filling to the center of each circle. Fold the dough in half and seal the edges with the tines of a fork.
- Place the empanadas in the freezer and preheat the oven to 400 degrees. When the oven is preheated, brush the empanadas with egg wash, and pierce the top with a knife. Bake for 20 to 25 minutes, or until golden brown. Serve.
- *Alternatively, cook in an air fryer on 400 degrees for 8-9 minutes.
