Ingredients
- ½ lb. Sugardale Bacon, cooked and chopped
- 4 medium russet potatoes
- 4 tbsp. butter, melted
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Chives for garnish
Directions
- Preheat oven to 400 degrees.
- Place a potato between two wooden spoons and slice the potato every quarter inch, careful to not cut all the way through. Repeat with all potatoes.
- Brush on the melted butter making sure to get in between each slice and sprinkle with salt and pepper.
- Bake the potatoes for 55 minutes. Remove from oven and top with cheese and bacon. Place back in the oven for another 5 minutes or until the cheese is completely melted.
- Garnish with chives and serve.
