Hasselback Loaded Potatoes

Ingredients

  • ½ lb. Sugardale Bacon, cooked and chopped
  • 4 medium russet potatoes
  • 4 tbsp. butter, melted
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Chives for garnish

Directions

  1. Preheat oven to 400 degrees.
  2. Place a potato between two wooden spoons and slice the potato every quarter inch, careful to not cut all the way through. Repeat with all potatoes.
  3. Brush on the melted butter making sure to get in between each slice and sprinkle with salt and pepper.
  4. Bake the potatoes for 55 minutes. Remove from oven and top with cheese and bacon. Place back in the oven for another 5 minutes or until the cheese is completely melted.
  5. Garnish with chives and serve.
