Lemon Ricotta Pasta with Bacon

Ingredients

  • 1 lb spaghetti
  • 1 Package Sugardale bacon, cooked and chopped
  • 1 cup ricotta
  • ½ cup olive oil
  • ½ cup parmesan cheese
  • 1 lemon, juiced
  • 4 leaves fresh basil
  • Salt + pepper

Directions

  1. Heat the oven to 400 degrees. Line a baking sheet with foil and place the bacon onto it. Cook the bacon for 15-20 minutes or until crispy.
  2. While the bacon cooks, cook the pasta according to package directions.
  3. In a small bowl combine the ricotta, olive oil, parmesan cheese, lemon, basil, salt and pepper.
  4. When the pasta is done, drain. When the bacon is done, chop.
  5. Combine pasta, ricotta sauce, and bacon.
  6. Top with extra bacon and basil if desired.
  7. Serve.
